Sweet Bulgur Wheat With Raisins Recipe
Bulgur wheat is a traditional Bulgarian dessert that’s often served during some Eastern Orthodox holidays.
It’s typically made with boiled bulgur which is combined with various dried fruits, lemon zest and powdered sugar.
This recipe also includes some breadcrumbs, which I believe create a smoother more enjoyable texture.
Even though it’s not completely necessary, you can also garnish it with crushed walnuts, raisins and dried aronia berries.
Ingredients
- Bulgur Wheat – You’ll need about a cup of coarse bulgur wheat.
- Walnuts – You can either use whole walnuts and grind them yourself or buy ground walnuts. I prefer the first option since it allows me greater control over the texture of this dessert.
- Breadcrumbs – A cup of Panko breadcrumbs will add a light texture and boost the flavor of the bulgur wheat.
- Raisins – Raisins and dried aronia berries add a touch of sweetness.
- Lemon Zest – Some lemon zest will add a refreshing flavor to this dish.
- Powdered sugar – You’ll need half a cup of powdered sugar which you’ll add just before serving.

Start by simmering the bulgur over low heat for 15 minutes.
Strain the cooked bulgur, then place it in a large bowl and mix it with the breadcrumbs.
Stir in the ground walnuts, lemon zest and cinnamon, then add the raisins and dried aronia berries.
Just before serving, add the powdered sugar and stir until it’s well combined with the rest of the ingredients.
Adding the powdered sugar just before serving will prevent the other ingredients from getting soggy.
Finish by serving the bulgur wheat in glass cups and garnishing it with some raisins, powdered sugar and walnuts.
Storage
Bulgur wheat can be enjoyed both hot and cold. If you have any leftovers you can store them in the fridge for a period between 4 and 6 days.
Make sure you keep the bulgur wheat in an airtight container so it can last for the longest amount of time.

Sweet Bulgur Wheat With Raisins Recipe
Ingredients
- 1 cup bulgur coarse
- 2 cups water
- 1 cup walnuts ground
- 1 cup Panko breadcrumbs
- 1/2 cup raisins
- 1/4 cup Aronia berries dried; chokeberry
- Lemon zest
- 1/2 tsp cinnamon
- 1/2 cup sugar powdered
For garnish:
- 6 tbsp walnuts ground
- 1 tbsp sugar powdered
- Raisins dried aronia berries
- Lemon zest optional
Instructions
- Place the bulgur in a pot and cover it with two cups of water. Let it simmer, then turn the heat down to low and cook for 12 to 15 minutes.
- Strain the bulgur using a sieve, then run it down under cold water.
- Grate the lemon zest.
- Transfer the strained bulgur to a large bowl and stir in the Panko breadcrumbs.
- Add the ground walnuts, lemon zest and cinnamon and stir everything together.
- Stir in the raisins and dried Aronia berries.
- Add the powdered dried sugar before serving, then stir it so it gets evenly combined and serve in glass cups.
- Garnish the bulgur with crushed walnuts, powdered sugar, lemon zest, Aronia berries and raisins.
